Like I told Matt, I am trying to "say yes" to things, not "no"... so just think about background for how a Mandalorian ended up with Bioware only available on Kamino. It is certainly possible, depending on how good your manners are and the depth of your pockets

Mandalorians can be any race under the armor. There are even wookie mandos that don't wear the armor.

Either or both ideas could work fine.
